New Start

My first dish is:

Tomato & Egg Stir-Fry 🍅🥚 | 家常番茄炒蛋
Starting my page with a dish that feels like home — simple, warm, and always comforting. If you grew up with this on the table, you know the magic.

Here’s how I made mine, from my stove to your plate 🤍

📝 Ingredients:
– 4 eggs (beaten with a pinch of salt)
– 3 medium tomatoes (cut into cubes)
– Tomato ketchup
– Oyster sauce
– Salt & sugar
– Water
– Corn starch (slurry for thickening)
– A splash of black vinegar
– Oil for frying
– Spring onions (for garnish)

👩🏻‍🍳 Method:

1. Beat the eggs with a pinch of salt. Dice your tomatoes and spring onions.

2. In a hot wok or pan, add oil and scramble the eggs till just set. Remove and set aside.

3. In the same pan, add more oil. Fry tomatoes, add a little water and let them soften.

4. Season with ketchup, oyster sauce, a pinch of salt and sugar. Let it simmer.

5. Add a corn starch slurry to gently thicken the sauce.

6. Return the eggs to the pan. Add a splash of black vinegar. Stir everything together till well-coated.

7. Garnish with spring onions and serve warm with rice.

Not perfect — but cooked with heart.
